How it's Made : Ginger Beer

Ginger is a popular flowering plant whose underground stem, or rhizome, is widely used as a spice and traditional medicine around the world. It has a warm, spicy taste and adds strong flavor to many dishes, teas, and drinks.


Ginger beer is made by combining fresh ginger, sugar, water, and a wild yeast starter called a "ginger bug" to ferment and naturally carbonate the drink.

Traditional, authentic ginger beer is made through natural fermentation using fresh ginger, sugar, water, and a starter culture like a "ginger bug" or commercial yeast. This differs significantly from modern commercial ginger beers or ginger ales, which are often just carbonated water mixed with manufactured ginger flavoring and corn syrup.

Fresh ginger: Provides the spicy flavor (unpeeled is fine, but wash it well).
Sugar: Feeds the yeast and adds sweetness.
Water: Filtered or dechlorinated water works best.
Lemon or lime juice: Adds brightness and balances the spice.

Cultivating the "Ginger Bug" (The Starter)
Before brewing the actual beverage, makers must harvest wild yeast and lactobacillus bacteria—similar to creating a sourdough starter for bread. 
  • Mixing: Freshly grated or chopped organic ginger, white sugar, and filtered water are mixed in a clean glass jar.
  • Feeding: Every 24 hours for 3 to 7 days, the brewer adds more ginger and sugar.
  • Activation: The wild yeasts living on the ginger skin consume the sugar, producing carbon dioxide. Once the liquid becomes bubbly, foamy, and smells slightly yeasty, the starter is ready. 

Step 1: Make a Ginger Bug (Starter)
Combine 2 tablespoons of grated fresh ginger, 2 tablespoons of sugar, and 1 cup of water in a jar.
Cover the jar with a breathable cloth secured by a rubber band.
Feed the mixture daily with 1 teaspoon each of grated ginger and sugar for about 3 to 5 days until it becomes bubbly and foamy. 

Step 2: Brew the Ginger Base
Simmer chopped or grated ginger (about 30g to 150g depending on how spicy you want it) with water and sugar for 5 to 10 minutes to extract the flavors.
Remove from heat, let it steep, and cool completely to room temperature.
Strain out the solid ginger pieces.

Step 3: Mix and Bottle
Stir your cooled ginger base together with a strained portion of your active, bubbly ginger bug liquid and some fresh citrus juice.
Pour the mixture into pressure-safe bottles, leaving a little space at the top for gas expansion.

  • Sealing: The liquid is transferred into airtight, pressure-safe bottles (like flip-top glass bottles or heavy plastic bottles).

Step 4: Ferment and Chill
Let the sealed bottles sit at room temperature for 2 to 3 days to build up carbonation.
Transfer the bottles to the refrigerator to slow down fermentation and chill before opening. 

  • Fermentation: The bottles sit at room temperature for 2 to 5 days. Because the bottles are sealed, the carbon dioxide gas produced by the yeast cannot escape. Instead, it dissolves into the liquid, creating natural, smooth carbonation. 
  • Crash Cooling: Once the bottles feel rock-hard (indicating they are carbonated), they are immediately moved to the refrigerator. Cold temperatures force the yeast into hibernation, stopping the fermentation process so the bottles do not explode.
