How It's Made : Peanut Butter

 Making fresh, creamy peanut butter requires just one ingredient—shelled peanuts—and a powerful food processor. You can roast them yourself for a deeper flavor, or use pre-roasted, unsalted/salted peanuts. The entire blending process takes only about 5 to 10 minutes

Ingredients & Equipment
  • Peanuts: 2 cups of dry-roasted peanuts (yields about 1 cup of peanut butter).
  • Optional Add-ins: 1/4 teaspoon sea salt, 1 to 2 teaspoons of honey, and 1 to 2 teaspoons of peanut or vegetable oil (to enhance creaminess).
  • Equipment: A high-speed food processor. 
Step-by-Step Instructions
  1. Roast the Peanuts (Optional): If using raw peanuts, spread them on a rimmed baking sheet and roast at 350°F (175°C) for 15 to 25 minutes until golden brown, stirring occasionally. Let them cool for 10 minutes before blending. 

Blend in Intervals: Place the peanuts in your food processor. Pulse a few times to break them down into a coarse crumble. 
Scrape Down the Sides: Turn the food processor on. The mixture will go through stages: it will look like powder, then clump into a ball, and finally turn to paste. Every 1 to 2 minutes, stop the machine and scrape down the sides and bottom with a spatula. 
Add Flavorings: Once the peanut butter becomes smooth and runny, add your optional salt, honey, or oil. Blend for another minute to fully incorporate. 
Adjust Texture (Optional): If you prefer crunchy peanut butter, reserve 1/2 cup of whole peanuts and stir them in at the very end. 
Store: Transfer your finished peanut butter into an airtight jar or container. Store it in the refrigerator where it will stay fresh for up to 3 to 4 months.
