Ketchup making process The industrial manufacturing process follows a structured sequence:
Selection & Washing: Ripe, red processing tomatoes are harvested, sorted for quality, and washed to remove dirt.
Crushing & Pulping: The tomatoes are chopped and heated to break down their cell walls. This pulp is strained to remove skins, seeds, and fibrous material.
Mixing & Cooking: The tomato paste is placed into industrial mixing tanks and combined with water, sweeteners (like high-fructose corn syrup or cane sugar), vinegar, salt, and proprietary spice blends (such as onion and garlic powder).
Homogenization & Pasteurization: The mixture is pressurized in a homogenizer to ensure a smooth, stable emulsion. It is then pasteurized to eliminate bacteria and ensure a long shelf life.
